This 21" cast iron griddle is suitable for ovens, stoves, grills and open flames. It's ridge surfacehelps to keep excess oil away from food while you cook. This girddle conducts heat more evenly when preheated and keeps the heat better than lightweight metals used in most kitchens. However, just like all cast iron products it will rust if left wet after cleaning. A couple things you can do to prevent this is to clean and wipe it dry with a dry towel and then put the cast iron gridde pan in a dry and ventilated place. You should also steer clear of dish detergentwhen cleaning. The detergent will destroy the oil film on the surface of the griddle pan, this destroys the service life of the cast iron pan. Instead, use some steel wool and elbow grease, with warm water. You can let the stove heat it up to dry the excess mositure. Then apply a thin layer of vegetable oil to keep the pan from rusting.
